Avocado has to be one of the healthiest foods you can eat. I love it in salads, sandwiches or combined with a few simple ingredients to make the most delicious creamy guacamole… JJ

It Really Couldn’t be easier…
æ Cut the beef tomato in half and scoop out the seeds. Chop the tomato flesh into tiny dice & place in a bowl. Add the finely diced red onion
æ Cut the avocados in half & remove the stones. Scoop out the flesh including the dark green flesh close to the skin. Place in the bowl with the tomato & red onion, add the lemon juice, this will help prevent the avocado from discolouring
æ Add the crushed garlic, chilli powder, Tabasco, season well with salt & pepper
æ Combine the ingredients crushing the avocado with the back of a fork until you achieve a rough or smooth texture depending on your preference
æ Heat the olive oil in a heavy based frying pan
æ Cut the tortilla wraps into triangles & shallow fry until golden brown on both sides
æ Remove from frying pan & sprinkle lightly with crushed salt
æ Serve warm with guacamole, wedge of lime & some fresh coriander
Just A Little Patience…
Recently my local ALDI had avocado on special - a twin pack costing just 44cent, the only downside was they were far from ripe. Undeterred I purchased two packs, on arriving home I unpacked them, placed them in a bowl on the kitchen table & three weeks later they were perfectly ripe… it was worth the wait!!
Made this to go with a glass of vino Saturday night. It was fab!!! Thank you and looking foward to making more of your recipes :)
