Bangers & Sweet Potato Mash

Comfort Food…
Nowadays there are a variety of quality gourmet sausages available on the market, everything from” Venison” to” Pork & Apple”. Depending on which flavour sausage you choose you can do endless variations of this dish, don’t be afraid to substitute the gravy for red wine jus or even curry sauce.  Similarly you could substitute the sweet potato for champ or celeriac mash – the possibilities are endless.

Either way it is the ultimate comfort food on a cold winters evening… JJ

It Couldn’t be easier…
æ      Heat oil in a heavy based frying pan browning sausages well on both sides
æ      Remove sausages from frying pan and arrange on a baking tray, place on the top shelf of a preheated oven (gas mark 6) for 30 minutes
æ      Add the diced Spanish Onion to the pan & fry until golden in colour
æ      Peel & dice the potatoes. Place in a saucepan of cold water, bring to the boil, reduce heat & simmer until cooked. Remove from heat & drain excess liquid
æ      Mash potatoes together with butter & cream, seasoning well with salt & pepper
æ      Boil water in a kettle & make instant gravy following instructions on the pack
æ      Add browned onions to the gravy mixture
æ      To serve, place a generous dollop of mashed potato on a warmed plate, top with sausages & steaming hot gravy…!!

Pennywise Tip…
Of course if you have time to make your own gravy it will be even nicer J
